Raw Peanut Slice

Are you a peanut lover like me? Theres something amazing about the combo of peanuts and chocolate.

This is one of the most requested slices in our house! So easy to make, quick and delicious.

Base
1 cup sunflower seeds OR almonds 
1 cup coconut
3/4 cup dates 

Filling
1 cup smooth peanut butter
5 tbsp melted coconut oil
2-3 tbsp liquid sweetener (I use maple or brown rice malt)
1 tsp pure vanilla extract + a pinch salt

Chocolate Layer
½ cup melted coconut oil
½ cup cacao powder
¼ cup maple syrup or brown rice malt

Method
1. Blitz base ingredients in a high powered food processor until they come together, press into a tray

2. Mix all filling ingredients together with a fork or spatula until smooth (if needed you could add a bit more coconut oil)

3. Pour on top of the base, put in the freezer for about 15 minutes to firm up

4. Once the peanut layer is slightly firm thats when its ready to pour the chocolate on top. (if its still soft you won’t be able to spread the chocolate on smoothly - the choc layer will likely start blending with the peanut layer!)

4. Add cacao powder to the melted coconut oil and mix, add the sweetener in and pour on top of the peanut layer NOTE: If the coconut oil is still warm it may mix very fast and become un-pourable, if this happens put the mixture over a double boiler to re melt before pouring on top.

5. Add chopped peanuts to the top. You could also add buckwheat grates or cacao nibs if you dont have peanuts.

6. Put in freezer to set, you can cut this slice and and eat it straight from the freezer.
