Liquorice Chocolate Slice
Who loves liquorice as much as me?!
I searched & searched to try & find a recipe for a slice using liquorice powder as it’s such a favourite flavour of mine! I have made a cheesecake version before but still to this day yet to find anyone that has made a raw slice version…So! Enter new creation
Base
1 cup almonds (or sunflower seeds - I often use half/half)
1 cup coconut
1 cup dates
Blend in high speed blender/food processor until it holds together in your fingers, then press into a square tin- Place in fridge
Liquorice Filling
2 cups cashews
1/2 cup water
1/4 cup liquid sweetener (I used maple)
1 tablespoon vanilla extract
1/2 cup cacao butter (dry - when melted approx 1/4 cup)
1/4 tsp salt
2 tbsp coconut oil
3 tbsp liquorice powder
Blend in a high speed blender until smooth. If your blender isn’t high powered it’s best you soak your cashews before blending.-Pour on top of base
Chocolate Layer
Pour your fav type of raw chocolate on top - I use:
1/2 cup coconut oil
1/2 cup cacao powder
1/4 cup maple syrup
Once mixed pour quickly over the filling while it’s still pourable - weather dependant how quick it sets! Top with cacao nibs, activated buckwheat or leave plain & keep in the freezer.
Notes: my Finnish & Swedish friends feel free to add more Liquorice powder & salt to taste
