Banoffee Slice
The most amazing flavour combo of bananas, peanut butter & chocolate
This is a super easy recipe that I first started making as a pie with whipped coconut cream on the top.
The original recipe I got online & all of a sudden one day that website vanished! So I made my own version & wrote it down.
I still make the pie if we are having a group for dinner -but I started making the slice version as it’s great to have a little squares cut up in the freezer without the cream on top.
Base
1 cup sunflower seeds OR almonds
1 cup walnuts OR cashews
3/4 cup dates
Filling
2 bananas
2 avocados
2/3 cup cacao powder
1 cup peanut butter
1/4 cup melted coconut oil
1/4 cup liquid sweetener
Method
1. Blitz base ingredients in a high powered food processor until they come together, press into a tray
2. Blend all filling ingredients together and pour on top of the base
3. Top with sliced banana and sprinkle with cacao powder
4. Put in freezer to set, you can cut this and and eat it straight from the freezer.
Note: if you want to make this as a pie, you can use coconut cream that has been in the fridge (this is easier to whip if it’s cold)
Add the whipped coconut cream to top of the pie and then top with sliced with banana and cacao
